It is summer time and everyone is gardening! I am always given tons of yellow squash, I don't know why everyone loves to grow yellow squash. I love zucchini but I only ever am given one or two and like twenty yellow squash. I don't get it. But whatever it is my reality so I make zucchini bread with zucchini and you guessed it yellow squash. Zucchini Bread Recipe This recipe make about 4 loaves of bread Ingredients:
Instructions: Preheat oven to 350 degrees F. Coat 4 9x5 inch Loaf pan s with butter and flour or I actually used sugar instead of flour and it gave it a delicious caramelized crust soo good! In a large bowl, add the grated zucchini, sugar, brown sugar, applesauce, oil, eggs, and vanilla. Whisk until well combined. Add the flour, baking powder, baking soda, salt, and cinnamon. Stir just until no dry flour remains, trying not to over mix. Pour the batter into the loaf pan. Bake for 50-55 minutes. A toothpick inserted into the center of the bread should come out with moist crumbs on it. Cool in the pan for 10 minutes. Remove from the pan and transfer to a wire cooling rack to cool completely before slicing.
